SHRIMP AND CHERRY TOMATO ZOODLES
Zoodles, better known as zucchini noodles, are no doubt our new favourite dish. Add in some wild caught shrimp in the mix and you have yourself a true winner! And the greatest part is that you can season and prepare them to taste the same as noodles, but zoodles are so much healthier and better for you.
INGREDIENTS
- 1 lb cooked Marina Del Rey cooked shrimp
- 2 large zucchinis
- 1 tbsp olive oil
- 1 green onion, chopped
- 2 cloves garlic, minced
- 1 tsp Sriracha Sauce
- 1 cup cherry tomatoes, cut in half
- 1 cup chicken broth
- Juice from half a lemon
INSTRUCTIONS
- Using a spiralizer, make the noodle strands with the zucchini. Place in a bowl and set aside.
- In a large skillet, heat the olive oil and cook the onion and garlic until soft. Add hot sauce, chicken broth and lemon juice. Stir then throw in the shrimp and cherry tomatoes.
- Cook for a couple minutes, not too long as shrimp is already cooked. Season with salt and pepper.
- Remove from heat and add zucchini noodles. Toss. Top with green onions and serve while warm.
